Mini Cheesecake

This is a recipe that is sure to have your family smiling when they taste it, Mini Cheese Cakes

Here is what you will need

• 12 Vanilla Wafers

• 2 - 8 oz packages of cream cheese

• ½ c. sugar

• 1 tsp vanilla

• 2 eggs

Now Let's Make it

Line muffin tin with foil liners.

Place 1 vanilla wafer in each liner.

Mix cream cheese, sugar, and vanilla on medium speed until well blended.

Add eggs. Mix well. Pour over wafers, filling ¾ full.

Bake at 325 degrees. Remove from pan when cool. Chill.

Top with fruit, preserves, nuts, or chocolate. Enjoy!
